I do love a gluten-free challenge, and there’s no reason we can’t make something as equally, or even more delicious!

      Hi Mary,

      If you’re looking for a cornbread recipe, there are a lot of great ones out there and you can substitute corn flour for cornmeal in the recipe.

      However you will notice that all cornbread recipes call for more kinds of flour than just corn – corn by itself doesn’t really bake well, it needs to be balance with another starch. The Whole Foods recipe is probably the simplest, and I’ve made it myself. But a tip: don’t use soy flour and sub in sorghum flour instead; soy flour has an odd metallic flavor. For the “best recipe” I’d say pick the first one from Gluten Free Girl and the Chef, though it has more ingredients.
